Cinnamon Raisin Mandel Bread

- 3 eggs
- ½ cup of canola oil
- 1 teaspoon of vanilla
- a squeeze of a small lemon
- 1 cup of granulated sugar
- 3 cups of flour
- 2 teaspoons baking power
- ½ cup of raisins.
- Mix together the eggs, oil, vanilla, and lemon juice. Add the sugar and mix until fully combined.
- /2 cup at a time, add the flour and baking powder until a dough forms.
- Add in the raisins.
- Turn the dough out onto a lightly floured kneading board and cut into three even pieces.
- Roll the pieces out into logs and place on parchment paper or on a silpat on top of a cookie sheet.
- Sprinkle with cinnamon and sugar and place into the oven for exactly 30 minutes.
