Simple Tomatillo Salsa

Delicious and simple salsa recipe made by roasting vegetables and blending them together in a food processor. This makes enough dip for a dinner party of 10. With enough for leftovers!
Ingredients
  • Serrano Peppers (1 for medium; 2 for hot; 0-1/2 for mild)
  • 1 Medium/Large Onion (chopped in half)
  • 1 Clove Garlic
  • 7 Tomatillos
  • 3 Tomatoes
  • Salt (to taste)
Instructions
  1. Pre-heat the oven to 500 F
  2. Place all ingredients into a large dutch oven and roast with the lid off for 50-60 mins.
  3. Remove from the oven.
  4. Peel the skin off of the tomatoes/tomatillos
  5. remove the stems from the peppers.
  6. Combine the vegetables in the food processor and...process. This isn't a chunky salsa. It's a more traditional consistency like a puree almost que es muy bueno! me gusta ;)
