Simple Shakshuka

Simple poached eggs in a spicy pepper-tomato sauce
Ingredients
  • 1 tbsp Olive oil
  • 4 garlic cloves minced
  • 1 red bell pepper diced
  • 1 large tomato or 4 medium-small tomatoes diced
  • 1 tbsp harissa-spicy level to your liking
  • ¼ tsp salt
  • ½ tsp freshly ground pepper
  • 1 egg
  • OPTIONAL:
  • ¼ tsp cumin
  • Pinch of paprika
Instructions
  1. Dice the peppers and tomatoes
  2. Mince the garlic cloves
  3. Heat the oil in a small pan on medium heat
  4. Toss in the all of the ingredients--the vegetables and the spices--and all them to cook together for approximately 10 minutes.
  5. Stir the sauce occasionally making sure the tomatoes lose their shape and become fulling incorporated into the stew
  6. Crack an egg into a small container and set aside
  7. Create a divot in the center of the sauce using a spoon or a spatula
  8. Drop the egg into the divot
  9. Turn the heat down to medium-low and cook for an additional 8-10 minutes watching the egg whites turn white.
  10. Remove from heat and grate manchego cheese over the pan.
  11. Enjoy!
