Simple Shakshuka

- 1 tbsp Olive oil
- 4 garlic cloves minced
- 1 red bell pepper diced
- 1 large tomato or 4 medium-small tomatoes diced
- 1 tbsp harissa-spicy level to your liking
- ¼ tsp salt
- ½ tsp freshly ground pepper
- 1 egg
- OPTIONAL:
- ¼ tsp cumin
- Pinch of paprika
- Dice the peppers and tomatoes
- Mince the garlic cloves
- Heat the oil in a small pan on medium heat
- Toss in the all of the ingredients--the vegetables and the spices--and all them to cook together for approximately 10 minutes.
- Stir the sauce occasionally making sure the tomatoes lose their shape and become fulling incorporated into the stew
- Crack an egg into a small container and set aside
- Create a divot in the center of the sauce using a spoon or a spatula
- Drop the egg into the divot
- Turn the heat down to medium-low and cook for an additional 8-10 minutes watching the egg whites turn white.
- Remove from heat and grate manchego cheese over the pan.
