Sweet prune & raisin bread

A tasty alternative to banana bread/zucchini bread!
Ingredients
  • ½ lb prunes
  • ¼ cup golden raisins
  • ¾ cup boiling water
  • 1 tsp baking soda
  • ¾ cup granulated sugar
  • 2 tbsp butter
  • 1 egg
  • 1¾ cup flour
  • 1 tsp salt
Instructions
  1. Soak your fruit in water for an hour
  2. Preheat your oven to 325 F
  3. Drain your prunes and raisins and pat dry.
  4. Chop the fruit and place into a stand mixer along with ¾ cup boiling water and 1 tsp of baking soda
  5. Add the rest of your ingredients slowly. First the sugar, then the butter, then the egg, then the dry ingredients.
  6. Empty the mixture into a greased loaf pan and place into the oven for 40 minutes
  7. Remove from the oven and allow prune and raisin bread to cool on a cooling rack
  8. Slice and enjoy!
