One Fish, Two Fish, Red Fish Poached in Coconut Milk!

Serves: 4
- 1 lb of fish (Acadian red fish, tilapia, or any other mild fish will do)
- 1 onion sliced
- 2 cups of cherry tomatoes
- The top ⅓ of a bunch of cilantro (about 1 cup, coarsely chopped or not at all!)
- 6 tbsp of olive oil
- 2 cloves of garlic (minced)
- 1 lemon (juice)
- 1 tsp ginger powder
- 1 8 oz can of coconut milk
- salt and pepper to taste
- Marinate the fish for 1-2 hours in the lemon juice, minced garlic, and olive oil.
- After 1-2 hours, pour the marinade into a sautee pan and heat on medium-high heat.
- Sautee the sliced onions and tomatoes on medium high heat until the onions are soft, but not completely translucent.
- Add the coconut milk and bring to a boil. Quickly reduce to simmer and cook down for 2 minutes.
- Add the cilantro and stir together.
- Add the pieces of fish such that the fish is submerged in the sauce for 2-3 minutes.
- Plate and eat!
